Tomato paste is processed from fresh, ripe and juicy tomatoes after boiling them in hot water & then removing the seeds and skin. The tomatoes are then mashed or roughly chopped before processing them in a blender or a food processor. The preparation is then heated to make it thick in consistency. As tomatoes are known for their deep savory notes & umami flavor, this tomato paste works as a flavor booster when added during cooking process. How to store leftover tomato paste :

Do not store tomato paste in the opened metal can. Transfer the leftover paste in airtight glass or metal containers and refrigerate. It will last for almost a week. To extend the shelf life upto many months, freeze the paste in ice trays and store the cubes in a heavy-duty freezer bag. While cooking, add few cubes of this as per requirement & taste and you are done !
